In Indonesia we have acar too, made of diced cucumber, shallots, and hot green chili peppers. Oftentimes we make it not for preservation so it won't last for months. We take it as a side dish for fried rice, fried noodles, noodle soup, martabak, and any other foods we want since acar is so versatile. That watermelon pickles looks so beautiful.
